Broccoli Saute with Garlic and Olive Oil

Broccoli is a such a simple vegetable packed with nutrients. Don’t you just love the beautiful color? I saw a bunch of beautiful broccoli begging to be picked up at our grocery store last week and I immediately knew this would come in handy for a quick side for dinner on a busy day. The inspiration for this recipe came from here. We enjoyed this with a black bean burger(Store bought patties) on  100 calorie sandwich thins topped with fried egg cooked hard over style. Guess we have covered the major food groups:-)

Ingredients

1 bunch broccoli or 12 oz broccoli florets

3 cloves garlic

2 teaspoons olive oil

1 teaspoon crushed red pepper

Salt

Method

1. Wash the broccoli florets and microwave them for 5 minutes

2. Take oil in a nonstick pan and once the oil is hot, add the crushed red pepper and chopped garlic and saute until garlic turns brown.

3. Add the broccoli to the above and stir fry on high heat for 3 minutes.

4. Add required amount of salt and mix well.
