Green Chutney Sandwich

My friend Z’s mom is an awesome cook. Aunt S ( Z’s mom) is very meticulous and she is one person I know who even gives the exact measurement of salt in a recipe. You can never go wrong if you follow her recipes to a “T”.  I first tasted this green chutney sandwich 15 years ago when Z brought it to college one day. It was love at first bite. The mélange of flavors in sandwich makes you crave for more. So with Aunt S’s consent, here’s the recipe for her green chutney sandwich.

Ingredients for Green chutney

2 bunches cilantro leaves

1 cup mint leaves

10 green chillies

8 cloves of garlic

2 tablespoons cashew powder

1 teaspoon cumin seeds

1/2 teaspoon peppercorn

1 teaspoon salt

juice of 1/2 lemon

1/2 cup water

Method for green chutney

Take all the ingredients in a blender and blend to a smooth paste.

Ingredients for Green chutney sandwich

2 slices bread

1 teaspoon green chutney

1/2 teaspoon butter

1/2 teaspoon tomato ketchup

1/2 teaspoon grated cheese

Method for sandwich

1. Spread butter on both slices of bread.

2. Spread green chutney on both slices of bread.

3. Add ketchup and cheese.
