Kale is one of the healthiest vegetables around and is a nutritional powerhouse. Kale makes a tasty addition to smoothies, soups and casseroles. Kale chips are another great away to use up kale especially if you are like me and buy kale in large bags. These chips are a great low calorie nutritious snack. The original recipe is from here. I reduced the amount of oil and added pepper. It is unlikely that you will have leftovers because these are utterly delicious and you can’t stop with one. But if you do, make sure to store them in an airtight jar.
Ingredients
1 head kale washed and thoroughly dried
1 tablespoon olive oil
1 teaspoon sea salt
1 teaspoon fresh ground pepper
Method
1. Preheat oven to 275F.
2. Remove ribs from kale and cut into 1 1/2 inch pieces.
3. Lay them on a baking sheet and toss with olive oil, salt and pepper. For best results, do not overcrowd the tray. Bake them in 2 batches if required.
4. Bake for 20 minutes turning them half way through.
5. Sprinkle more salt and pepper if required.
