This is a delicious and nutritious way to get your greens and carbs in one meal. I wanted to use up some kale that has been sitting around for a few days and thought it would be nice to toss it with some pasta for a wholesome lunch. I got the recipe from here and it turned out so yummy that this has been my lunch for the past 2 days. This dish is spicy, bright and comes together in a flash. What’s not to love about it right? This makes a perfect lunch for one and its vegan too.
1oz whole wheat thin spaghetti or any pasta of your choice
1 cup finely chopped kale
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped sun dried tomatoes
1 tablespoon toasted whole wheat bread crumbs
1 tablespoon olive oil
Salt if needed
1. Cook pasta according to package instructions. Set aside.
2. Heat oil in a pan and sauté kale with crushed red pepper flakes for about 3 minutes on medium flame.
3. Add cooked spaghetti, sun dried tomatoes and bread crumbs and toss well. Add salt if needed.
4. To make your own whole wheat bread crumbs toast the bread heels( the thick, end pieces of a bread loaf) let it sit out for 5minutes, toast them again and run them through a food processor.
