Naan, an Indian flat bread is traditionally eaten with Indian curries. Naan has been substituted for pizza dough for a very long time, at least in India. I remember when i was growing up in India, we used to make pizzas on a skillet with Nilgiris naan, substitute tomato ketchup for pizza sauce and use good old Amul cheese. Now naan pizza is making waves again and is being served for appetizers, main course and even breakfast in some places. I personally love it because there is almost no work involved in making this. This makes for a great personal pizza and perfect for family pizza nights. Have a range of toppings from olives, mushrooms, sliced onions, peppers to kid friendly peanut butter and pineapple and I promise everyone will be happy.
Roasted tomatoes and feta are like match made in heaven. And these roasted tomatoes are incredibly simple to make. Preheat oven to 450F. Cut tomatoes lengthwise, sprinkle 1/4 teaspoon of sugar, salt and pepper and bake for 20minutes. They store well for up to 2 weeks in the refrigerator, that is if you can exercise some self control because these garlicky, sweet tomatoes are so delicious:)
We had these pizzas last night while watching Downton Abbey. Guys I can’t tell you which one I liked better, the pizza or Downtown Abbey. I was almost convinced that even Mrs Patmore would have made these for the Crawleys if only she knew about these delicious pizzas.You can use store bought fresh or frozen naan and play around with toppings. This is a great meal that comes together in 15 minutes. You can even eat it for breakfast with an egg on top.
1 fresh or frozen naan ( I used Trader Joe’s frozen garlic naan)
1/4 cup feta cheese
1/4 cup chopped roasted tomatoes
2 tablespoons tomato basil marinara or any pasta sauce of your choice
2 tablespoons pesto ( optional)
1. Preheat oven to 400F.
2. Place naan on a lightly oiled baking sheet.
3. Mix marinara and pesto and spread on top of naan. You could do just pesto or any sauce of your choice.
4. Place tomatoes and crumbled feta cheese or other toppings of your choice and bake for 10minutes. Feta doesn’t melt like mozzarella, there wont be much difference in appearance between before and after placing in oven. You will notice the cheese has softened when you eat the pizza.
5. If you do not have an oven, cook the naan on a skillet and place sauce and toppings and cover with a lid for 5minutes on low flame. You will enjoy the same results.
