This healthy vegan salad is rich in protein and can be made in a flash. We used to eat this salad at least twice a week while growing up and we ate them without complaints. It is so addictive and incredibly filling. The addition of fresh lemon juice is refreshing and makes this a favorite salad of mine. Green mango makes this heart healthy salad tangy and crunchy. This salad has the right balance of savory, sweet, hot and sour flavors which makes it a classic Indian salad.
1 cup raw peanuts with skin
1 carrot, grated
1/2 green mango, finely chopped
1 tomato, deseeded and finely chopped
1/2 red onion, finely chopped
1 tablespoon fresh cilantro leaves, finely chopped
juice from 1 small lemon
2 Thai green chilies, minced
1. Pressure cook the peanuts for 3whistles and let the pressure completely release before opening the cooker. Drain and place the peanuts in a large bowl. Alternatively, you can cook the peanuts with enough water on stovetop until completely soft.
2. Add carrots, green mango, tomato, onion, green chili, lemon juice and salt. Mix well.
3. Garnish with chopped cilantro leaves.
