Juicy mangoes are combined with quinoa and beans and a simple lime dressing does wonders to this nutritious salad. 1 cup red quinoa
1 medium red onion, finely chopped
1 medium ripe mango, diced
1/2 cup beans of your choice ( I used black eyed peas)
1/2 cup diced, deseeded tomatoes ( I used mini heirloom tomatoes)
juice from 1 small lime
1 teaspoon olive oil
1. Cook quinoa according to package directions and set aside.
2. Whisk together lime juice, oil, salt and pepper.
3. Combine the rest of the ingredients in a bowl.
4. Add cooked quinoa and dressing, mix well and serve chilled or at room temperature.
