Quinoa Summer Salad

If you want an easy summer salad which is visually and gastronomically pleasing, then you are in luck. This red quinoa summer salad is versatile, simple and will be the star of any summer picnic. Juicy mangoes are combined with quinoa and beans and a simple lime dressing does wonders to this nutritious salad. The options are endless with this salad, you can add fresh basil, avocado, papaya, roasted corn, peppers and anything else you like. I promise you will love it.

1 cup red quinoa

1 medium red onion, finely chopped

1 medium ripe mango, diced

1/2 cup beans of your choice ( I used black eyed peas)

1/2 cup diced, deseeded tomatoes ( I used mini heirloom tomatoes)

juice from 1 small lime

1 teaspoon olive oil


black pepper


1. Cook quinoa according to package directions and set aside.

2. Whisk together lime juice, oil, salt and pepper.

3. Combine the rest of the ingredients in a bowl.

4. Add cooked quinoa and dressing, mix well and serve chilled or at room temperature.
