When we were driving home with our loot from cherry picking couple of weeks ago, I knew I had to make my first ever home made ice cream with some of those lovely bing cherries. With simple everyday ingredients and equipment this ice cream is definitely a summer favorite of ours. What’s even more interesting is that its completely vegan. If you can’t find pitted cherries or think its too much work to remove the pits, use berries and you can even add vegan chocolate chips or cocoa powder for a variation, it would taste just as good.
1 cup frozen pitted cherries
1 large frozen banana, cut into chunks
1/2 cup almond milk
Sugar or maple syrup ( optional)
1. Place all the ingredients in a blender.
2. Blend until smooth. If you have a vitamix or blendtec, it won’t take more than 60 seconds. On blendtec, you can use the ice cream option to get the perfect consistency. For all other blenders or food processors, scrape the sides often and blend until smooth.
3. It tastes best served immediately, you can freeze it too.
